Instructions
- Prepare the Peaches: Peel and pit the peaches, keeping them as whole as possible. Optionally, stuff with red bean paste or whipped cream and freeze for at least 1 hour.
- Make the Mochi Dough: Combine sweet rice flour, sugar, water, and vanilla in a microwave-safe bowl. Microwave in 1-minute intervals until thick and translucent.
- Shape the Mochi: Dust a surface with cornstarch, spread the hot dough, cool slightly, and flatten portions to wrap around the peaches.
- Wrap the Peaches: Carefully wrap each peach with the mochi dough, pinching to seal. Dust with cornstarch and chill before serving.
Notes
- Freezing the peaches makes wrapping easier. For smaller portions, slice and wrap individually. Store in an airtight container at room temperature for up to 1 day or refrigerate for up to 2 days.
