Vegetarian Chili:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 cans (15 ounces each) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (6 ounces) tomato paste
- 2 cups vegetable broth
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, bell peppers, carrots, and celery. Cook for 6–7 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add all beans, diced tomatoes, tomato paste, vegetable broth, corn, chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne if using. Stir well to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, stirring occasionally, until flavors meld and chili thickens.
- Taste and adjust seasoning as needed. Serve hot with your favorite toppings like shredded cheese, sour cream, avocado, or tortilla chips.
Notes
- This chili tastes even better the next day after the flavors have deepened.
- For a smoky kick, add a chopped chipotle pepper in adobo sauce.
