Description
A hearty and comforting vegetable beef soup featuring ground beef, a medley of frozen mixed vegetables, tender potatoes, and rich tomato flavors simmered to perfection in beef broth with aromatic Italian seasoning.
Ingredients
Scale
Meat and Aromatics
- 1 lb ground beef
- 1 small onion, diced
- 1 tsp garlic, minced
Liquids and Seasonings
- Salt & pepper, to taste
- 3 1/2 cups beef broth
- 1 (15 oz) can petite diced tomatoes
- 1 (10.5 oz) can condensed tomato soup
- 2 tsp Worcestershire sauce
- 2 tsp Italian seasoning
Vegetables
- 1 (16 oz) bag frozen mixed vegetables
- 2 medium potatoes, diced (any variety, such as russet)
Instructions
- Brown the Beef and Sauté Aromatics: In a large pot or Dutch oven, cook ground beef over medium heat, breaking it apart as it cooks. Add diced onion and minced garlic, cooking until the beef is browned and the onions are translucent.
- Season the Meat Mixture: Season the beef and onion mixture with salt and pepper to taste, stirring well to combine all flavors.
- Add Broth and Tomato Bases: Pour in the beef broth, petite diced tomatoes (with juices), condensed tomato soup, Worcestershire sauce, and Italian seasoning. Stir everything together thoroughly.
- Incorporate Vegetables and Potatoes: Add the frozen mixed vegetables and diced potatoes to the pot. Stir to evenly combine all ingredients.
- Simmer the Soup: Bring the soup to a boil over medium-high heat, then reduce the heat to low. Cover the pot and let the soup simmer gently for 30 minutes, or until the potatoes are tender when pierced with a fork.
- Finalize and Serve: Taste the soup and adjust seasonings if needed with additional salt and pepper. Serve the soup warm for a comforting meal.
Notes
- Use any variety of potatoes, but russet or Yukon gold work best for a hearty texture.
- For a thicker soup, cook uncovered after simmering to reduce the broth slightly.
- Frozen mixed vegetables typically include carrots, peas, corn, and green beans, but you can customize per preference.
- This soup can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
- Try adding a dash of hot sauce or a sprinkle of fresh parsley for extra flavor before serving.
