Chicken Salad:
- 2 cups cooked shredded or chopped chicken breast
- 1 cup plain Greek yogurt
- ½ cucumber (grated and squeezed to remove excess moisture)
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 garlic clove (minced)
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup diced red onion
- ½ cup diced cherry tomatoes (optional)
- ¼ cup crumbled feta cheese (optional)
Instructions
- Mix the Dressing: In a large bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, parsley, salt, and pepper. Stir until smooth.
- Add Chicken and Vegetables: Add shredded chicken, red onion, and cherry tomatoes. Stir to coat with the tzatziki dressing. Fold in crumbled feta.
- Chill and Serve: Refrigerate for at least 30 minutes. Serve chilled on its own, in wraps, pita bread, or over a salad.
