Instructions
- Season the chicken: Pat chicken breasts dry and season evenly with salt, black pepper, and paprika on both sides.
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5 to 7 minutes on each side until golden brown and fully cooked through. Remove from skillet and set aside on a plate.
- Sauté garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant but not browned.
- Cook tomatoes: Add cherry tomatoes and sun-dried tomatoes to the skillet and cook for 2 to 3 minutes until tomatoes soften and release their juices.
- Prepare cream sauce: Reduce heat to medium-low, then stir in heavy cream, grated Parmesan cheese, dried Italian herbs, and crushed red pepper flakes if using. Simmer gently for 2 to 3 minutes until the sauce starts to thicken.
- Add spinach: Stir in baby spinach and cook until wilted, about 1 to 2 minutes.
- Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the creamy sauce over the chicken to coat them well.
- Garnish and serve: Sprinkle chopped fresh basil on top before serving. Enjoy with pasta, rice, or crusty bread to soak up the delicious sauce.
