Description

A creamy and flavorful Italian-inspired Tuscan Garlic Chicken recipe featuring tender chicken breasts cooked in a rich garlic cream sauce with sun-dried tomatoes, cherry tomatoes, and fresh spinach.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil

Sauce and Vegetables

  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup baby spinach

Creamy Sauce

  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh basil (for garnish)

Instructions

  1. Season the chicken: Pat chicken breasts dry and season evenly with salt, black pepper, and paprika on both sides.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5 to 7 minutes on each side until golden brown and fully cooked through. Remove from skillet and set aside on a plate.
  3. Sauté garlic: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant but not browned.
  4. Cook tomatoes: Add cherry tomatoes and sun-dried tomatoes to the skillet and cook for 2 to 3 minutes until tomatoes soften and release their juices.
  5. Prepare cream sauce: Reduce heat to medium-low, then stir in heavy cream, grated Parmesan cheese, dried Italian herbs, and crushed red pepper flakes if using. Simmer gently for 2 to 3 minutes until the sauce starts to thicken.
  6. Add spinach: Stir in baby spinach and cook until wilted, about 1 to 2 minutes.
  7. Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the creamy sauce over the chicken to coat them well.
  8. Garnish and serve: Sprinkle chopped fresh basil on top before serving. Enjoy with pasta, rice, or crusty bread to soak up the delicious sauce.

Notes

  • For a lighter version, substitute half-and-half or coconut cream for heavy cream.
  • Serve with your choice of pasta, rice, or crusty bread to complement the creamy sauce.
  • If sun-dried tomatoes are unavailable, you may omit them, though they add a rich flavor.
