Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream Butter and Sugars: In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Combine Wet Ingredients: Beat in the eggs one at a time, then mix in the vanilla.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Add Mix-Ins: Stir in the oats, chocolate chips, and nuts if using.
- Bake: Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are golden brown and the centers are still slightly soft.
- Cool and Serve: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra chewy cookies, slightly underbake them and allow them to finish setting on the baking sheet.
- Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months.
