Main Chili:
- 2 tablespoons olive oil
- 1 large onion (diced)
- 4 cloves garlic (minced)
- 1 pound ground beef (or ground turkey)
- 1 (15 oz) can kidney beans (drained and rinsed)
- 1 (15 oz) can black beans (drained and rinsed)
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional for heat)
Toppings:
- Shredded cheese
- Sour cream
- Chopped green onions
- Avocado
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened. Stir in garlic.
- Add ground beef and cook until browned. Drain excess grease. Season with chili powder, cumin, paprika, oregano, salt, pepper, and cayenne.
- Stir in tomato paste and add diced tomatoes, tomato sauce, beans, and broth. Simmer.
- Reduce heat, cover, and simmer for 30 minutes. For best flavor, simmer uncovered for 1–2 hours.
- Taste and adjust seasonings. Serve hot with desired toppings.
