Main Chili:

  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 4 cloves garlic (minced)
  • 1 pound ground beef (or ground turkey)
  • 1 (15 oz) can kidney beans (drained and rinsed)
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional for heat)

Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped green onions
  • Avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened. Stir in garlic.
  2. Add ground beef and cook until browned. Drain excess grease. Season with chili powder, cumin, paprika, oregano, salt, pepper, and cayenne.
  3. Stir in tomato paste and add diced tomatoes, tomato sauce, beans, and broth. Simmer.
  4. Reduce heat, cover, and simmer for 30 minutes. For best flavor, simmer uncovered for 1–2 hours.
  5. Taste and adjust seasonings. Serve hot with desired toppings.
