For the Casserole:
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (10.5 oz) can cream of mushroom soup
- ½ cup sour cream
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon Worcestershire sauce
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese, divided
- 1 (32 oz) bag frozen tater tots
For Garnish:
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef: In a large skillet over medium heat, cook the ground beef and diced onion until browned. Add garlic and cook for another minute. Drain excess grease.
- Combine ingredients: Stir in cream of mushroom soup, sour cream, Worcestershire sauce, mixed vegetables, salt, and pepper. Cook until warmed through. Remove from heat and stir in 1 cup of shredded cheddar cheese.
- Assemble the casserole: Spread the beef mixture in the baking dish. Arrange tater tots in a single layer over the top.
- Bake: Bake uncovered for 35–40 minutes until tots are golden. Sprinkle remaining cheddar cheese over the top and bake for an additional 5 minutes.
- Serve: Let rest before serving. Garnish with parsley if desired.
Notes
- You can substitute ground turkey or chicken for the beef.
- For a crispier topping, broil the casserole for the last 2–3 minutes.
