Pasta:
- 12 ounces pasta (penne or rotini)
BBQ Sausage:
- 1 tablespoon olive oil
- 1 pound smoked sausage (sliced into rounds)
- 1 small onion (diced)
- 2 garlic cloves (minced)
- 1 cup barbecue sauce
- ½ cup tomato sauce
- ½ cup chicken broth
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- 1 cup shredded cheddar cheese
- 2 green onions (sliced)
- Salt and black pepper to taste
Instructions
- Cook the pasta: Cook pasta according to package directions until al dente. Drain and set aside.
- Sear the sausage: In a large skillet, heat olive oil over medium-high heat. Add sliced sausage and cook until browned on both sides, about 5 minutes. Remove sausage and set aside.
- Sauté onions and garlic: In the same skillet, sauté the onion and garlic until softened and fragrant, about 3 minutes.
- Prepare the sauce: Stir in barbecue sauce, tomato sauce, chicken broth, apple cider vinegar, brown sugar, smoked paprika, and chili powder. Bring to a simmer and cook for 5 minutes.
- Combine ingredients: Return the sausage to the skillet, then add the cooked pasta and toss to coat evenly in the sauce.
- Melt the cheese: Reduce heat to low, sprinkle with shredded cheddar cheese, and cover until melted.
- Serve: Garnish with green onions and serve hot.
Notes
- For a spicier version, add diced jalapeños or use a spicy barbecue sauce.
- This dish can also be baked—transfer to a casserole dish, top with cheese, and bake at 375°F for 15 minutes.
