For the Bowls:
- 1 tablespoon olive oil
- 1 pound lean ground turkey
- 3 cups broccoli florets (fresh or frozen)
- 2 cloves garlic (minced)
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 2 cups cooked brown rice or jasmine rice
For the Sauce:
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 teaspoons water
Instructions
- Sauce Preparation: In a small bowl, whisk together soy sauce, honey, rice vinegar, sriracha, sesame oil, and cornstarch slurry. Set aside.
- Cooking Bowls: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 5–6 minutes, breaking it up as it browns. Once cooked through, add garlic and red pepper flakes, and cook for 1 minute until fragrant.
- Adding Broccoli: Add broccoli to the skillet. If using fresh broccoli, add 2 tablespoons of water, cover, and steam for 3–4 minutes until tender. If using frozen, cook a bit longer uncovered.
- Final Steps: Pour the sauce into the skillet and stir well to coat the turkey and broccoli. Simmer for 2–3 minutes until the sauce thickens slightly. Serve the turkey and broccoli mixture over bowls of warm cooked rice. Garnish with green onions or sesame seeds if desired.
Notes
- Swap rice for cauliflower rice to make it low carb.
- Ground chicken or beef also works well.
- Double the sauce if you like extra for drizzling.
