- ½ cup fresh strawberries (finely diced and patted dry)
- 2–3 tablespoons granulated sugar (for rolling)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add wet ingredients: Beat in the egg, vanilla extract, and almond extract if using.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and crushed freeze-dried strawberries.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Add fresh strawberries: Gently fold in the diced fresh strawberries.
- Shape and bake: Scoop tablespoon-sized balls of dough, roll them in granulated sugar, and place them on the baking sheet. Bake for 11–13 minutes.
- Cool and enjoy: Allow the cookies to cool before transferring to a wire rack to cool completely.
