Description

A light and refreshing Strawberry Mousse made with fresh strawberries, whipped cream, and gelatin. Perfect for a delicate dessert that’s both creamy and fruity, with a smooth texture and natural sweetness.

Ingredients

Scale

Strawberry Mixture

  • 2 cups fresh strawberries, hulled
  • 1/2 cup granulated sugar (adjust to taste)

Cream Mixture

  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Gelatin

  • 1 tablespoon unflavored gelatin powder
  • 3 tablespoons water

Instructions

  1. Prepare Strawberry Puree: Blend the fresh hulled strawberries until smooth to create a fresh strawberry puree. Mix the puree with granulated sugar and let it sit for 10 minutes to allow the flavors to meld and the sugar to dissolve.
  2. Whip Cream: In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form for a light, fluffy texture that will give the mousse its characteristic creaminess.
  3. Combine Mixtures: Gently fold the strawberry puree into the whipped cream mixture, being careful to retain the airiness of the whipped cream, which helps keep the mousse light and airy.
  4. Prepare Gelatin: Dissolve the unflavored gelatin powder in warm water, stirring until fully dissolved. Allow the gelatin to cool slightly to prevent curdling the mousse when added.
  5. Incorporate Gelatin: Slowly mix the slightly cooled gelatin into the combined mousse mixture, ensuring an even distribution to help it set properly.
  6. Chill to Set: Pour the mousse mixture into serving glasses or bowls and refrigerate for at least 4 hours or until fully set for optimal texture and firmness before serving.

Notes

  • Adjust sugar quantity to your preferred sweetness or depending on the natural sweetness of your strawberries.
  • Gelatin can be substituted with agar-agar for a vegetarian alternative.
  • Make sure the gelatin is cool before mixing into the mousse to avoid lumps.
  • For best results, use fresh, ripe strawberries.
  • Serve chilled, and optionally garnish with fresh strawberry slices or mint leaves for presentation.
