Description

These Strawberry Lemonade Popsicles combine fresh strawberries, tangy lemon juice, and a touch of natural sweetener to create a refreshing, fruity treat perfect for warm days. Easy to prepare with just a blender and freezer, they’re a delightful homemade alternative to store-bought popsicles.

Ingredients

Scale

Strawberry Lemonade Mixture

  • 3 1/2 cups fresh or frozen strawberries (thawed, if frozen)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 23 Tbsp. honey or agave (adjust, to taste)
  • 3/4 cup water

Instructions

  1. Prepare the Strawberry Lemonade Mixture: In a blender, combine the strawberries, fresh lemon juice, honey or agave, and water to create the base for your popsicles.
  2. Blend: Puree the mixture until it reaches a smooth consistency, ensuring all the ingredients are fully combined for the best flavor.
  3. Adjust Sweetness: Taste the blended mixture and add more lemon juice or honey/agave if you prefer it more tart or sweeter. Blend briefly again if you add anything.
  4. Fill the Popsicle Molds: Using a funnel or carefully pouring, fill the popsicle molds with the strawberry lemonade mixture, leaving a little space at the top for expansion.
  5. Insert Sticks: Cover the molds with their lids and insert the popsicle sticks securely to prepare for freezing.
  6. Freeze: Place the molds in the freezer for at least 3-4 hours, or until the popsicles are completely solid.
  7. Enjoy: Once frozen, remove the popsicles from the molds and enjoy a refreshing, homemade strawberry lemonade treat!

Notes

  • Use fresh strawberries for the best flavor, but frozen strawberries work well when thawed.
  • Adjust the sweetness to your taste by varying the amount of honey or agave.
  • If you don’t have popsicle molds, small paper cups and wooden sticks can be used as alternatives.
  • To release popsicles easily, run warm water briefly over the outside of the molds.
  • For a smoother texture, strain the blended mixture to remove seeds if desired.
