Description

This refreshing Strawberry Cream Cheese Icebox Cake is a no-bake dessert featuring layers of fresh strawberries, creamy sweetened cream cheese filling, and crunchy graham crackers. Chilled for hours to meld flavors and soften the crackers, it offers a perfect combination of creamy, fruity, and crispy textures, ideal for warm weather or an easy, impressive dessert.

Ingredients

Scale

Strawberries

  • 1 pound fresh strawberries (washed, hulled, and sliced)

Cream Cheese Filling

  • 8 ounces cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Whipped Cream

  • 1 1/2 cups heavy cream

Others

  • 24 graham cracker sheets

Instructions

  1. Prepare the Strawberries: Wash the strawberries thoroughly under cold water, remove the stems, and slice them thinly. Set aside.
  2. Prepare the Cream Cheese Filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract to the cream cheese and beat until well combined and smooth.
  3. Whip the Heavy Cream: In a separate mixing bowl, whip the heavy cream until stiff peaks form.
  4. Fold in the Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until fully incorporated, taking care not to deflate the whipped cream for a light texture.
  5. Assemble the Icebox Cake: Line the bottom of an 8×8 inch square baking dish with graham crackers, breaking them to fit as needed. Spread a layer of the cream cheese mixture evenly over the crackers, then arrange a layer of sliced strawberries on top. Repeat layers of graham crackers, cream cheese filling, and sliced strawberries until all ingredients are used, finishing with a layer of cream cheese mixture.
  6. Chill the Cake: Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. This allows the flavors to meld and the graham crackers to soften into a cake-like texture.
  7. Serve: Before serving, optionally garnish with extra sliced strawberries. Cut into squares and serve chilled for a delightfully creamy and fruity dessert.

Notes

  • Ensure the cream cheese is softened for easier mixing and a smoother filling.
  • Whip the cream to stiff peaks to hold the structure of the filling well.
  • This cake can be prepared a day in advance to enhance the flavor melding.
  • Use fresh, ripe strawberries for the best flavor and texture.
  • Substitute graham crackers with digestive biscuits if desired, but texture and flavor will vary.
  • Keep the dessert refrigerated until serving to maintain its firm texture.
