Description

Delight in these irresistible Strawberry Cheesecake Eggroll Bites, featuring a creamy sweet strawberry cheesecake filling wrapped in crispy golden eggroll wrappers and lightly dusted with cinnamon sugar. Perfect as a fun and easy-to-make dessert or party treat.

Ingredients

Scale

Filling

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup diced strawberries

Wrapper

  • 12 eggroll wrappers

For Frying and Garnish

  • Oil, for frying (vegetable or canola oil recommended)
  • Cinnamon sugar, for sprinkling

Instructions

  1. Prepare the filling: In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Stir well until the mixture is smooth and creamy, ensuring no lumps remain.
  2. Add strawberries: Gently fold the diced strawberries into the cream cheese mixture, distributing them evenly without breaking them down too much to keep the texture intact.
  3. Assemble eggrolls: Lay one eggroll wrapper on a clean surface. Place a spoonful of the cream cheese and strawberry filling in the center of the wrapper, making sure not to overfill for easy wrapping.
  4. Wrap eggrolls: Fold the sides of the eggroll wrapper over the filling, then tightly roll it up from one corner to the opposite corner to form a small, sealed eggroll bite. Use a little water on the edges to seal if needed.
  5. Heat the oil: Pour oil into a pan, enough to submerge the eggroll bites halfway, and heat it over medium heat until it reaches approximately 350°F (175°C).
  6. Fry the eggroll bites: Carefully place the eggroll bites in the hot oil and fry for 2-3 minutes on each side until they turn a beautiful golden brown and crispy.
  7. Drain excess oil: Remove the fried eggroll bites from the oil using a slotted spoon and place them onto paper towels to drain any excess oil and keep them crisp.
  8. Add finishing touch: While still warm, sprinkle the eggroll bites generously with cinnamon sugar to add a sweet and slightly spiced finish before serving.

Notes

  • Ensure cream cheese is softened to room temperature for easy mixing and creamy texture.
  • Do not overfill the eggroll wrappers to prevent them from bursting during frying.
  • Use fresh strawberries for best flavor and texture; frozen strawberries are not recommended.
  • Maintain medium heat while frying to ensure the eggrolls cook evenly without burning.
  • Serve eggroll bites warm for optimal flavor and texture.
  • Leftover bites can be refrigerated and gently reheated in an oven or air fryer for crispness.
