  • 1 tsp baking powder
  • ½ tsp baking soda

  • Zest of 2 oranges
  • 150g pitted dates, chopped
  • 3 large eggs
  • 120ml (½ cup) freshly squeezed orange juice
  • 100ml (â…“ cup + 1 tbsp) vegetable oil

Clove Syrup

  • 200g (1 cup) brown sugar
  • 250ml (1 cup) water
  • 3–4 whole cloves
  • Juice of 1 orange


Instructions

  1. Prepare dry ingredients: In a large bowl, mix together the all-purpose flour, brown sugar, baking powder, baking soda, ground cardamom, ground cloves, and salt until well combined.
  2. Zest and chop: Zest two oranges and chop the pitted dates into small pieces, then set aside these ingredients for later incorporation.
  3. Combine wet ingredients: In a separate bowl, beat the eggs, then add freshly squeezed orange juice, vegetable oil, and vanilla extract, mixing thoroughly to combine.
  4. Mix wet and dry: Gently stir the wet ingredients into the dry ingredients, then fold in the chopped dates and orange zest carefully to ensure an even distribution without overmixing.
  5. Preheat oven and prepare pan: Preheat your oven to 175°C (350°F) and grease or line a baking pan suitable for the batter size.
