  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey

For Honey Butter:

  • 1/4 cup unsalted butter, softened
  • 2 tablespoons honey
  • Vegetable oil for frying

Instructions

  1. Dry Ingredients: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  2. Wet Ingredients: In another bowl, mix buttermilk, eggs, melted butter, and 1/4 cup honey until combined. Add wet ingredients to dry ingredients, stirring until just combined.
  3. Frying: Heat vegetable oil in a deep skillet to 350°F. Drop batter by rounded tablespoons into hot oil and fry for 2–3 minutes per side until golden brown. Drain on paper towels.
  4. Honey Butter: Beat softened butter with 2 tablespoons honey until smooth and fluffy. Serve cornbread poppers warm with honey butter and extra honey drizzle if desired.
