Pancake Batter

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 2 tablespoons melted butter

Instructions

  1. Prepare beef patties: In a bowl, gently mix ground beef with salt, pepper, garlic powder, onion powder, and mustard (if using). Divide the mixture into 8 small, thin patties and set aside.
  2. Make pancake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk buttermilk, egg, and melted butter. Pour wet ingredients into dry ingredients and stir just until combined. Fold in shredded cheddar cheese if desired.
  3. Cook pancakes with beef: Heat a griddle or skillet over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of pancake batter per pancake onto the hot surface. Immediately place a thin beef patty on top of each pancake while the batter is still wet and gently press it in. Cook for 2–3 minutes.
