Pancake Batter
- 1 1/2 cups all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda

- 1 1/4 cups buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/4 cup shredded cheddar cheese (optional for pancakes)

Instructions
- Prepare beef patties: In a bowl, gently mix ground beef with salt, pepper, garlic powder, onion powder, and mustard (if using). Divide the mixture into 8 small, thin patties and set aside.
- Make pancake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk buttermilk, egg, and melted butter. Pour wet ingredients into dry ingredients and stir just until combined. Fold in shredded cheddar cheese if desired.
- Cook pancakes with beef: Heat a griddle or skillet over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of pancake batter per pancake onto the hot surface. Immediately place a thin beef patty on top of each pancake while the batter is still wet and gently press it in. Cook for 2–3 minutes.
- Flip and finish cooking: Carefully flip the pancake and beef patty together. Top each with a slice of American cheese right after flipping to allow it to melt. Cook for an additional 2–3 minutes until both sides are golden brown and beef is cooked through.
- Serve: Serve the smash burger pancakes with your favorite burger toppings such as pickles, ketchup, mustard, chopped onions, and bacon if using. For an extra twist, drizzle with maple syrup for a sweet and savory combination.
