Lentil Soup:

  • 1 ½ cups dried red or yellow lentils, rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium Yukon gold potato, diced
  • 1 (15-ounce) can diced tomatoes with juice
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 2 cups water
  • juice of 1 lemon
  • 1/4 cup chopped fresh cilantro or parsley for garnish (optional)

Instructions

  1. Add the Ingredients: Combine lentils, onion, garlic, carrots, celery, potato, tomatoes, turmeric, cumin, coriander, paprika, ginger, salt, pepper, broth, and water in the slow cooker.
  2. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
  3. Finish: Stir in lemon juice. Blend part of the soup for creaminess if desired. Serve hot, garnished with cilantro or parsley.
