Lentil Soup:
- 1 ½ cups dried red or yellow lentils, rinsed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 medium Yukon gold potato, diced
- 1 (15-ounce) can diced tomatoes with juice
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups vegetable broth
- 2 cups water
- juice of 1 lemon
- 1/4 cup chopped fresh cilantro or parsley for garnish (optional)
Instructions
- Add the Ingredients: Combine lentils, onion, garlic, carrots, celery, potato, tomatoes, turmeric, cumin, coriander, paprika, ginger, salt, pepper, broth, and water in the slow cooker.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
- Finish: Stir in lemon juice. Blend part of the soup for creaminess if desired. Serve hot, garnished with cilantro or parsley.
