Chicken Marinade
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp cornstarch
Cooking & Sauce
- 1 tbsp vegetable oil
- 4 scallions, cut into 2-inch pieces
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp oyster sauce
- 1 tbsp soy sauce (extra for the sauce)
- 1 tsp sesame oil
- 1/4 tsp black pepper
- 1/4 cup chicken broth or water
Instructions
- Marinate the Chicken: Mix the chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Let it marinate for 10 to 15 minutes to tenderize the meat and help it absorb the flavors.
- Heat the Pan: Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat until hot and shimmering, ready for stir-frying.
- Cook the Chicken: Add the marinated chicken to the hot skillet and stir-fry for 5 to 6 minutes, stirring frequently, until the chicken is browned and fully cooked. Remove the chicken from the skillet and set aside.
- Cook the Aromatics: In the same skillet, stir-fry the scallions, minced garlic, and minced ginger for 1 to 2 minutes until fragrant and slightly softened, releasing their aromatic flavors.
- Prepare the Sauce: In a small bowl, combine 2 tablespoons oyster sauce, 1 tablespoon extra soy sauce, 1 teaspoon sesame oil, 1/4 teaspoon black pepper, and 1/4 cup chicken broth or water. Stir well to blend the sauce.
- Combine and Finish: Return the cooked chicken to the skillet with the aromatics, pour the prepared sauce over everything, and stir-fry for another 2 to 3 minutes until the chicken is evenly coated and the sauce thickens slightly.
- Serve: Serve the scallion chicken hot over steamed rice or noodles for a complete meal.

- You can use either chicken thighs or breasts based on your preference; thighs tend to be more tender and juicy.
