Ingredients
Scale
Egg Mixture
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Fillings
- 1 cup cooked breakfast sausage, crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons chopped green onions
- Optional: pinch of red pepper flakes or hot sauce
Dough and Finishing
- 1 sheet puff pastry or pizza dough (thawed if frozen)
- 1 tablespoon butter, melted (for brushing)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
- Make Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Cook the mixture in a nonstick skillet over medium heat, stirring gently until softly scrambled but still moist. Remove from heat and set aside to cool slightly.
- Prepare Dough: On a lightly floured surface, roll out the puff pastry or pizza dough into a rectangular shape large enough to hold the filling evenly.
- Assemble Rolls: Spread the cooked scrambled eggs evenly over the dough surface. Sprinkle the crumbled sausage, cheddar, mozzarella, and green onions evenly over the eggs. Add a pinch of red pepper flakes or a dash of hot sauce if you like a bit of spice.
- Roll and Slice: Starting from the long side, roll the dough tightly into a log shape. Pinch the seam to seal it securely. Using a sharp knife, slice the log into 8–10 equal rolls and place them cut side up on the prepared baking sheet.
- Brush and Bake: Brush the tops of the rolls with the melted butter to help them brown nicely. Bake in the preheated oven for 18–22 minutes, or until the rolls are puffed up and golden brown.
- Cool and Serve: Remove from the oven and let the rolls cool slightly before serving. Enjoy warm for the best taste and texture.
Notes
- You can substitute the sausage with bacon, ham, or sautéed vegetables for different flavor variations.
- These rolls are excellent for meal prep and can be reheated in a toaster oven or microwave.
- Add fresh herbs such as chives or parsley for an extra burst of flavor.
