- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup warm water
- 2 tablespoons olive oil (plus extra for brushing)

- 1 head garlic
Herbs and Seasoning
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh parsley
- 1/4 teaspoon black pepper
- Optional sea salt for topping
Instructions
- Roast Garlic: Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft and golden. Let cool, then squeeze out the roasted garlic into a small bowl and mash into a paste.
- Prepare Dough: In a large mixing bowl, combine flour, baking powder, and salt. Add warm water, olive oil, and the mashed roasted garlic. Mix until a dough forms, then knead for 2–3 minutes until smooth. Cover and let rest for 15 minutes.
- Shape Flatbreads: Divide the rested dough into 4 equal pieces. Roll each piece out into a thin oval or round shape on a lightly floured surface.
- Cook Flatbreads: Heat a skillet or griddle over medium-high heat and brush with a little olive oil. Cook each flatbread for 2–3 minutes per side, or until golden brown and cooked through.
- Finish and Serve: While still warm, brush the flatbreads with more olive oil and sprinkle with chopped fresh rosemary, thyme, parsley, black pepper, and sea salt if desired. Serve warm.
