Instructions

  1. Prepare the Beef: Toss the beef cubes with flour, salt, and pepper to coat evenly. Heat olive oil in a skillet over medium-high heat and sear the beef in batches until browned on all sides, about 5-7 minutes per batch. Transfer the browned beef to a slow cooker.
  2. Sauté Vegetables: In the same skillet, add the chopped onion, minced garlic, sliced carrots, and chopped celery. Cook for about 5 minutes, stirring occasionally, until softened.
  3. Add Flavorings: Stir in the tomato paste and cook for another minute to enhance its flavor. Deglaze the skillet by pouring in the red wine (if using), scraping up any browned bits from the bottom. Pour this mixture into the slow cooker with the beef.
