To Serve:

  • 12 oz pasta (like pappardelle or rigatoni)
  • Grated Parmesan and fresh parsley

Instructions

  1. Sauté Vegetables: Heat olive oil in a large skillet; sauté onion, garlic, and carrots until softened.
  2. Cook Meat: Add ground meat and brown, breaking it up as it cooks.
  3. Add Ingredients: Stir in tomato paste, crushed tomatoes, broth or wine, oregano, salt, pepper, and red pepper flakes if using. Simmer for 20–25 minutes.
  4. Finish Sauce: Stir in milk or cream; simmer for 5 minutes. Cook pasta al dente; reserve pasta water.
  5. Combine: Toss pasta with ragù, adding pasta water to loosen. Serve topped with Parmesan and parsley.

  • For deeper flavor, simmer the ragù for up to an hour on low.
