Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, granulated sugar, and active dry yeast. Let sit for 5 minutes until the mixture is foamy and the yeast is activated.
  2. Make the dough: Add the flour, salt, and melted butter to the yeast mixture. Mix until a dough forms. Transfer to a floured surface and knead for about 5 minutes until smooth and elastic.
  3. First rise: Place the dough in a greased bowl and cover it. Allow it to rise in a warm place for 1 hour or until doubled in size.
  4. Prepare for baking: Preheat the oven to 425°F and line two baking sheets with parchment paper. In a large pot, bring 10 cups of water and the baking soda to a boil.
  5. Shape pretzel bites: Punch down the risen dough and divide it into 6 equal pieces. Roll each piece into a 12–15 inch long rope, then cut into 1-inch pieces to form pretzel bites.
