Description
This crispy Potato Chip Chicken recipe features tender boneless, skinless chicken breasts coated in crushed potato chips and seasoning salt, then baked or fried to golden perfection. The potato chip coating adds a flavorful crunch without the need for traditional breading.
Ingredients
Scale
Chicken
- 3 boneless skinless chicken breasts (about 1 pound)
Coating
- 1 large bag potato chips, crushed
- 2 tablespoons seasoning salt (such as Lawry’s)
- 2 eggs, beaten
Instructions
- Preheat and prepare: Preheat your oven to 375°F (190°C) if baking, or prepare a skillet with oil over medium heat if frying.
- Crush the potato chips: Place the large bag of potato chips into a shallow bowl and crush them to create a coarse coating.
- Mix the egg wash: In another bowl, beat the 2 eggs and stir in 2 tablespoons of seasoning salt until well combined.
- Coat the chicken: Dip each chicken breast first into the egg mixture, making sure it’s fully coated, then press it into the crushed potato chips to adhere well for a crispy crust.
- Bake the chicken: For baking, place the coated chicken breasts on a greased baking sheet. Bake for 25–30 minutes or until the chicken is cooked through and the coating is golden and crispy.
- Or fry the chicken: For frying, heat oil in a skillet over medium heat. Cook the chicken breasts for 5–7 minutes on each side, until golden brown and fully cooked. Drain on paper towels to remove excess oil.
- Rest and serve: Allow the chicken to rest for a few minutes before serving to let the juices redistribute and the coating to set.
Notes
- You can choose between baking or frying depending on your preference for a lighter or crispier result.
- Using seasoning salt in the egg wash seasons the chicken evenly without additional steps.
- Make sure to press the potato chips firmly so they adhere well to the chicken for a crunchy texture.
- Check the internal temperature of the chicken to ensure it reaches 165°F (74°C) for safe consumption.
- Drain fried chicken on paper towels to prevent sogginess from excess oil.
