Description

Deliciously combining the flavors of pizza and enchiladas, these Pizza Enchiladas are a fun and easy baked dish perfect for a family meal. Rolled tortillas filled with mozzarella, pepperoni, and vegetables are topped with pizza sauce and cheese, then baked until bubbly and golden.

Ingredients

Scale

Base

  • 8 large flour tortillas
  • 1 1/2 cups pizza sauce

Filling

  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped green bell pepper (optional)

Seasoning & Garnish

  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Prepare Baking Dish: Spread about 1/2 cup of pizza sauce evenly on the bottom of a 9×13-inch baking dish to prevent sticking and add flavor.
  3. Assemble Tortillas: On each tortilla, spread a thin layer of pizza sauce, then sprinkle evenly with mozzarella cheese, sliced pepperoni, black olives, and green bell pepper.
  4. Roll Tortillas: Roll up each tortilla tightly to encase the fillings and place them seam-side down in the prepared baking dish.
  5. Add Sauce on Top: Pour the remaining pizza sauce evenly over the rolled tortillas, ensuring they are well coated.
  6. Top with Cheese and Seasoning: Sprinkle the top with the remaining mozzarella cheese, dried oregano, and garlic powder to enhance the flavor.
  7. Bake: Bake uncovered in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden.
  8. Garnish and Serve: Remove from the oven, garnish with fresh basil or parsley if desired, and serve warm.

Notes

  • You can customize the fillings by adding vegetables like mushrooms or onions, or using different types of cheese.
  • Using large flour tortillas helps hold the filling better and makes rolling easier.
  • If you prefer a spicier dish, add red pepper flakes or a dash of hot sauce to the filling or sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • For a gluten-free option, use gluten-free tortillas.
