For the Gummies:
- 1 cup coconut water
- ½ cup fresh lemon juice
- 2 tbsp honey or maple syrup
- ¼ tsp sea salt
- ¼ cup freeze-dried strawberry or raspberry powder (for pink color and flavor)
- 3 tbsp unflavored grass-fed gelatin
Instructions
- In a small saucepan, combine the coconut water, lemon juice, honey or maple syrup, and sea salt. Whisk in the freeze-dried fruit powder until fully dissolved and the mixture turns a bright pink.
- Sprinkle the gelatin over the surface and let it sit for 1–2 minutes to bloom. Turn the heat to low and stir continuously until the gelatin fully dissolves, about 2–3 minutes. Do not let the mixture boil.
- Once smooth and fully combined, remove from heat. Carefully pour the mixture into silicone gummy molds or a shallow dish.
- Refrigerate for 1–2 hours, or until firm. Once set, remove the gummies from the molds or cut into bite-sized squares if using a dish.
- Store in an airtight container in the refrigerator for up to 1 week.

- You can adjust the sweetness or tartness by changing the amount of honey and lemon juice.
