Pineapple:
- 1 cup fresh pineapple chunks (cut small)
Syrup:
- 2 cups granulated sugar
- 1 cup apple cider vinegar
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon celery seed
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Prepare Syrup: In a medium saucepan, combine sugar, apple cider vinegar, turmeric, garlic powder, ginger, celery seed, and cayenne if using. Bring to a boil over medium heat, stirring until sugar dissolves.
- Cook with Ingredients: Reduce heat to a gentle simmer and cook for 5 minutes. Add jalapeños and pineapple, return to a boil, then reduce heat again and simmer for 4–5 minutes until jalapeños begin to soften.
- Jar and Store: Using a slotted spoon, transfer jalapeños and pineapple into sterilized jars. Continue simmering syrup for another 5 minutes to thicken slightly, then pour hot syrup over the jalapeños and pineapple, leaving 1/4-inch headspace. Seal jars with lids and refrigerate for up to 3 months, or process in a water bath canner for shelf stability.
