Description

Enjoy the sweet heat of Pineapple Cowboy Candy with this easy recipe that combines jalapeños, pineapple, and a flavorful syrup. Perfect for adding a spicy kick to your favorite dishes or as a unique gift for friends and family.

Ingredients

Scale

Jalapeños:

  • 2 cups sliced jalapeños (about 1/4-inch thick)

Pineapple:

  • 1 cup fresh pineapple chunks (cut small)

Syrup:

  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Prepare Syrup: In a medium saucepan, combine sugar, apple cider vinegar, turmeric, garlic powder, ginger, celery seed, and cayenne if using. Bring to a boil over medium heat, stirring until sugar dissolves.
  2. Cook with Ingredients: Reduce heat to a gentle simmer and cook for 5 minutes. Add jalapeños and pineapple, return to a boil, then reduce heat again and simmer for 4–5 minutes until jalapeños begin to soften.
  3. Jar and Store: Using a slotted spoon, transfer jalapeños and pineapple into sterilized jars. Continue simmering syrup for another 5 minutes to thicken slightly, then pour hot syrup over the jalapeños and pineapple, leaving 1/4-inch headspace. Seal jars with lids and refrigerate for up to 3 months, or process in a water bath canner for shelf stability.

Notes

  • The flavor improves after sitting for at least 24 hours.
  • Serve over cream cheese with crackers, on burgers, in tacos, or as a spicy-sweet glaze for meats.
