Instructions

- Combine wet ingredients: In a large bowl, whisk together oil, granulated sugar, and brown sugar. Add eggs one at a time, then mix in pumpkin puree, milk, and vanilla extract.
- Combine dry and wet ingredients: Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Bake: Pour batter into loaf pan and bake for 55–65 minutes, until a toothpick inserted in the center comes out clean.
- Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
