Instructions

  1. In a large bowl, mix together peanut butter, softened butter, powdered sugar, and vanilla until smooth. Gently fold in the Rice Krispies cereal until evenly combined.
  2. Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes until firm.
  3. Meanwhile, melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  4. Dip each peanut butter ball into the melted chocolate, coating fully. Use a fork to lift and let excess drip off. Return to the lined tray and repeat with remaining balls.
