For the Peanut Butter Balls:

- 1 cup powdered sugar
- 1 1/2 cups Rice Krispies cereal

For the Chocolate Coating:
- 1 1/2 cups semi-sweet or milk chocolate chips
- 1 tbsp coconut oil or shortening (optional, for smoother melting)
Instructions
- In a large bowl, mix together peanut butter, softened butter, powdered sugar, and vanilla until smooth. Gently fold in the Rice Krispies cereal until evenly combined.
- Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes until firm.
- Meanwhile, melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, coating fully. Use a fork to lift and let excess drip off. Return to the lined tray and repeat with remaining balls.
- Refrigerate until chocolate is set, about 20–30 minutes. Serve chilled or at room temperature.
Notes
- Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.
