Peach Financiers are delicate and elegant French almond cakes that combine the rich nuttiness of browned butter with the sweet juiciness of fresh peaches. These mini cakes are perfect for tea time or dessert, offering a moist crumb and a beautiful presentation with thin peach slices on top.

- 1/2 cup almond flour
- 1/2 cup powdered sugar
- 1/4 cup all-purpose flour
- 1/4 tsp salt

- 4 large egg whites

- 1–2 ripe peaches, thinly sliced
- Optional: sliced almonds

Instructions
- Preheat and prepare molds: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or a financier mold to prevent sticking.
- Brown the butter: In a small saucepan over medium heat, melt the unsalted butter. Continue cooking it until it turns a golden brown color and emits a nutty aroma, about 4–5 minutes. Remove from heat and allow it to cool slightly.
- Mix dry ingredients: In a mixing bowl, whisk together almond flour, powdered sugar, all-purpose flour, and salt until well combined to ensure even distribution.
- Whisk egg whites: In a separate bowl, lightly whisk the egg whites just until they become frothy but not stiff to incorporate air gently.
- Combine ingredients: Add the egg whites and vanilla extract to the dry ingredients and stir until just combined. Slowly pour in the browned butter, mixing well to create a smooth batter.
- Fill molds and add peaches: Spoon the batter into the prepared molds, filling each about three-quarters full. Place thin peach slices gently on top of each and press them lightly into the batter. Sprinkle with sliced almonds if desired.
- Bake: Bake in the preheated oven for 15–18 minutes or until the edges turn golden and a toothpick inserted in the center comes out clean.
- Cool and serve: Let the financiers cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Dust with powdered sugar before serving if you like.

- You can store leftover financiers in an airtight container for up to 2 days.
- If peaches are not available, nectarines or plums can be used as excellent substitutes.
