Description

This One Pot Lemony Pasta with Sausage, Broccoli Rabe, and Burrata is a delicious and satisfying dish that combines savory Italian sausage with vibrant broccoli rabe, zesty lemon, creamy burrata cheese, and a sprinkle of Parmesan. It’s a flavorful one-pot meal that’s perfect for a cozy dinner.

Ingredients

Scale

Pasta:

  • 12 oz short pasta (such as orecchiette, rigatoni, or penne)

Sausage Mixture:

  • 1 lb Italian sausage (sweet or spicy), casings removed
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)

Additional Ingredients:

  • 1 bunch broccoli rabe, trimmed and chopped into 2-inch pieces
  • zest and juice of 1 large lemon
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pasta cooking water (reserved)
  • 8 oz burrata cheese, torn into pieces
  • salt and black pepper to taste
  • fresh basil or parsley for garnish

Instructions

  1. Boil Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente, adding broccoli rabe in the last 2 minutes. Reserve pasta water, then drain.
  2. Cook Sausage Mixture: In a skillet, cook sausage in olive oil until browned. Add garlic and red pepper flakes.
  3. Combine Ingredients: Add drained pasta and broccoli rabe to skillet. Stir in lemon zest, lemon juice, Parmesan, and reserved pasta water. Season with salt and pepper.
  4. Serve: Transfer to bowls, top with burrata, and garnish with basil or parsley. Serve hot.

Notes

  • If you prefer a milder green, substitute broccoli rabe with broccolini or spinach.
  • For extra richness, drizzle with a bit of good-quality olive oil before serving.
