Pasta:

- 1 bunch broccoli rabe, trimmed and chopped into 2-inch pieces
- zest and juice of 1 large lemon
- 1/2 cup grated Parmesan cheese
- 1/2 cup pasta cooking water (reserved)
- 8 oz burrata cheese, torn into pieces
- salt and black pepper to taste
- fresh basil or parsley for garnish
Instructions
- Boil Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente, adding broccoli rabe in the last 2 minutes. Reserve pasta water, then drain.
- Cook Sausage Mixture: In a skillet, cook sausage in olive oil until browned. Add garlic and red pepper flakes.
- Combine Ingredients: Add drained pasta and broccoli rabe to skillet. Stir in lemon zest, lemon juice, Parmesan, and reserved pasta water. Season with salt and pepper.
- Serve: Transfer to bowls, top with burrata, and garnish with basil or parsley. Serve hot.
