Description

This One-Pot Creamy Taco Pasta is a delicious and effortless meal combining the bold flavors of taco seasoning with creamy cheese and tender pasta. Perfect for busy weeknights, this recipe delivers a satisfying and comforting dish in just 30 minutes with minimal cleanup.

Ingredients

Scale

Main Ingredients

  • 8 oz pasta
  • 1 lb ground beef
  • 1 taco seasoning packet
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef with vegetables: In a large pot over medium heat, cook the ground beef along with the chopped onions and bell peppers until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain excess fat if necessary.
  2. Add taco seasoning: Stir in the taco seasoning packet thoroughly, ensuring the beef and vegetables are evenly coated with the spices.
  3. Add diced tomatoes and broth: Pour in the canned diced tomatoes along with their juices and chicken broth, stirring to combine.
  4. Add pasta and boil: Add 8 ounces of pasta to the pot. Increase heat to bring the mixture to a boil.
  5. Simmer until pasta is cooked: Once boiling, reduce the heat to low and cover the pot. Simmer gently for 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed much of the liquid.
  6. Stir in heavy cream and cheese: Remove the pot from heat and mix in the heavy cream and shredded cheese. Stir until the cheese melts into a creamy sauce.
  7. Season to taste: Add salt and pepper according to your preference, mixing well to distribute the seasoning.
  8. Serve hot: Ladle the creamy taco pasta into bowls and serve immediately for a comforting, flavorful meal.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Use gluten-free pasta to make this recipe gluten-free.
  • Add extra vegetables such as corn or black beans for added texture and nutrition.
  • If you prefer a spicier dish, add some chopped jalapeños or a dash of hot sauce.
  • Leftovers store well in the refrigerator for up to 3 days and reheat nicely on the stove or microwave.
