Ingredients
Scale
Main Ingredients
- 8 oz pasta
- 1 lb ground beef
- 1 taco seasoning packet
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers
- Salt and pepper to taste
Instructions
- Brown the ground beef with vegetables: In a large pot over medium heat, cook the ground beef along with the chopped onions and bell peppers until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain excess fat if necessary.
- Add taco seasoning: Stir in the taco seasoning packet thoroughly, ensuring the beef and vegetables are evenly coated with the spices.
- Add diced tomatoes and broth: Pour in the canned diced tomatoes along with their juices and chicken broth, stirring to combine.
- Add pasta and boil: Add 8 ounces of pasta to the pot. Increase heat to bring the mixture to a boil.
- Simmer until pasta is cooked: Once boiling, reduce the heat to low and cover the pot. Simmer gently for 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed much of the liquid.
- Stir in heavy cream and cheese: Remove the pot from heat and mix in the heavy cream and shredded cheese. Stir until the cheese melts into a creamy sauce.
- Season to taste: Add salt and pepper according to your preference, mixing well to distribute the seasoning.
- Serve hot: Ladle the creamy taco pasta into bowls and serve immediately for a comforting, flavorful meal.
