Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and prepare the bottom pie crust in a 9-inch pie pan, ensuring it’s evenly placed.
- Plump Raisins: In a medium saucepan, combine the raisins and water. Cook over medium heat until the raisins become plump, about 5 minutes, stirring occasionally to prevent sticking.
- Mix Sugar and Spices: In a small bowl, whisk together the brown sugar, granulated sugar, flour, salt, and cinnamon until evenly combined. Add this mixture to the saucepan with the plumped raisins and stir continuously until the filling thickens, approximately 5 minutes.
- Add Butter and Vanilla: Remove the saucepan from heat and stir in the butter and vanilla extract. Allow the filling to cool slightly to prevent soggy crust.
- Fill Pie Crust: Pour the cooled raisin filling into the prepared bottom pie crust, spreading it out evenly.
