Ingredients
Scale
For the Beef:
- 1 1/2 pounds beef sirloin or tenderloin, thinly sliced into strips
- 2 tablespoons unsalted butter
For the Sauce:
- 1 medium onion, diced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 cup sour cream
- Salt and black pepper to taste
- 2 tablespoons all-purpose flour
For Serving:
- Cooked egg noodles or rice
- Chopped fresh parsley for garnish
Instructions
- Cook Beef: In a large skillet over medium-high heat, melt butter. Add beef strips and cook until browned but not fully cooked through, about 3–4 minutes. Remove beef and set aside.
- Sauté Vegetables: In the same skillet, add onion and mushrooms. Sauté for 5–6 minutes until softened and browned. Add garlic and cook for 1 minute more.
- Thicken Sauce: Sprinkle flour over the vegetables and stir well to coat. Slowly pour in beef broth while stirring to avoid lumps. Add Worcestershire sauce and Dijon mustard. Bring to a simmer and cook until sauce thickens, about 3–5 minutes.
- Finish Dish: Return the beef to the skillet and cook until heated through and tender. Remove from heat and stir in sour cream. Season with salt and pepper to taste.
- Serve: Serve stroganoff over cooked egg noodles or rice. Garnish with chopped parsley.
Notes
- For a richer sauce, use heavy cream instead of sour cream.
- Adjust thickness by adding more broth if needed.
- This dish is best served immediately for creamy texture.
