Instructions
- Prepare Beans: If using dried black beans, soak them in water overnight, then rinse and drain to ensure they soften perfectly during cooking.
- Sauté Vegetables: Heat a splash of cooking oil in a large pot over medium heat. Add the finely chopped onions and minced garlic, cooking until the onions become translucent and fragrant, about 3-4 minutes.
- Add Bell Pepper and Corn: Stir in the diced bell pepper and corn, sautéing for another 2-3 minutes until slightly softened.
- Combine Ingredients: Stir in the soaked or canned black beans, long-grain rice, bay leaf, cumin, and water. Mix thoroughly to ensure all ingredients are evenly combined.
