Beef Mixture

  • 2 tbsp olive oil
  • 1 lb 1⅔ oz (500g) good quality minced beef
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 large egg, lightly beaten (divided)

  • 1 lb 1⅔ oz (500g) puff pastry

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) to prepare for baking the Wellington.
  2. Cook Vegetables: Heat olive oil in a frying pan over medium heat. Add the chopped onion, carrot, celery, potato, and chopped rosemary. Cook for about 8 minutes until the vegetables are softened. Add the minced garlic during the last minute of cooking. Transfer the cooked vegetables to a large bowl and allow them to cool completely.
  3. Prepare Filling: To the cooled vegetables, add the minced beef, salt, black pepper, and half of the beaten egg. Mix thoroughly until all ingredients are well combined, forming the filling.
  4. Assemble Wellington: Roll out the puff pastry to the size of a small tea towel. Place the beef filling along one long edge of the pastry. Brush the edges of the pastry with the remaining beaten egg, then carefully roll the pastry around the filling, sealing the edges and pinching the ends to fully encase the filling.
  5. Bake: Place the rolled pastry seam-side down on a baking tray. Brush the top with the remaining beaten egg to achieve a golden finish. Bake in the preheated oven for 1 hour, or until the pastry is golden brown and cooked through.
