Ingredients
Scale
Vegetables
- 1 small onion, finely chopped
- 1 green bell pepper or Turkish green pepper, chopped
- 2 medium ripe tomatoes, diced
Other Ingredients
- 2 tablespoons olive oil
- 1/2 teaspoon ground paprika
- Salt, to taste
- Black pepper, to taste
- 4 large eggs
- Fresh parsley, for garnish (optional)
Instructions
- Heat the Oil and Sauté Vegetables: Heat the olive oil in a nonstick skillet over medium heat. Add the chopped onion and green pepper, sautéing for 5–6 minutes until softened and fragrant.
- Add Tomatoes and Seasonings: Stir in the diced tomatoes and ground paprika. Season with salt and black pepper to taste. Cook the mixture for 8–10 minutes, stirring occasionally until the tomatoes break down and the sauce thickens slightly.
- Add Eggs: Crack the eggs directly into the tomato mixture without whisking. Gently stir to combine the eggs with the vegetables.
- Cook the Eggs: Continue cooking for 3–4 minutes, stirring occasionally, until the eggs are just set but still soft and slightly runny. Remove from heat immediately to avoid overcooking.
- Garnish and Serve: Garnish with fresh parsley if desired. Serve warm with crusty bread or pita for a classic Turkish breakfast experience.
Notes
- For richer flavor, add a pinch of Aleppo pepper or sprinkle feta cheese on top.
- Butter can be used instead of olive oil for a creamier texture.
- Menemen is traditionally served with bread and makes a perfect breakfast or light meal.
