Instructions

- Cook the Vegetables: Add the sliced bell pepper, zucchini, and halved cherry tomatoes to the skillet. Sauté for 4–5 minutes until the vegetables are tender-crisp.
- Season the Stir-Fry: Stir in the kalamata olives, dried oregano, ground cumin, crushed red pepper flakes (if using), salt, and black pepper. Cook for 2 more minutes to allow the flavors to blend well.
- Finish with Fresh Ingredients: Remove the skillet from heat. Stir in the lemon juice and chopped parsley for brightness and freshness.
