Sauce:

  • 3 garlic cloves (minced)

  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes (drained and chopped)
  • 1 tablespoon tomato paste
  • 2 tablespoons fresh basil (chopped)

Garnish:

  • Extra Parmesan and basil for garnish

Instructions

  1. Cook the pasta: Boil penne pasta until al dente, then drain and set aside.
  2. Sear the chicken: Season chicken strips with salt, pepper, and Italian seasoning. Sear in olive oil until cooked through; set aside.
  3. Make the sauce: In the same skillet, sauté garlic and red pepper flakes. Add broth, cream, Parmesan, tomatoes, and tomato paste. Simmer until thickened.
  4. Combine everything: Return chicken and pasta to the skillet. Toss in the sauce and simmer until heated through.
