Ingredients
Scale
Marinade
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons Worcestershire sauce
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
Mushrooms and Skewers
- 1 pound button mushrooms, cleaned and stems trimmed
- Wooden or metal skewers (wooden recommended to be soaked)
Instructions
- Prepare the Marinade: Combine olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, smoked paprika, salt, and freshly ground black pepper in a bowl. Whisk together until smooth and well blended.
- Marinate the Mushrooms: Add the cleaned button mushrooms to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, but preferably for 2 to 3 hours to allow the flavors to deeply infuse the mushrooms.
- Soak the Skewers: If you are using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent them from burning on the grill.
- Preheat the Grill: Preheat your grill to medium-high heat to get a good sear and char on the mushrooms once they are placed on the skewers.
- Assemble the Skewers: Thread the marinated mushrooms evenly onto the skewers, leaving a little space between each mushroom to ensure even cooking on all sides.
- Grill the Mushrooms: Place the assembled skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally to achieve a nice char and to cook through evenly.
- Serve and Enjoy: Remove the skewers from the grill, garnish with fresh parsley if desired, and serve warm as an appetizer or side dish.
Notes
- For a vegan version, use maple syrup instead of honey.
- Button mushrooms work best, but cremini or baby bella mushrooms can be used for a richer flavor.
- If you don’t have a grill, you can cook the skewers under a broiler or on a grill pan on the stovetop.
- Soaking wooden skewers is essential to prevent them from burning during grilling.
- Serve with a side of fresh herbs or a squeeze of lemon for extra brightness.
