Description

These Marinated Grilled Mushroom Skewers are a flavorful and healthy appetizer or side dish, featuring tender button mushrooms marinated in a savory blend of olive oil, soy sauce, balsamic vinegar, and aromatic herbs. Perfectly grilled to develop a smoky char, these skewers are simple to make and great for any outdoor gathering or weeknight meal.

Ingredients

Scale

Marinade

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Mushrooms and Skewers

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers (wooden recommended to be soaked)

Instructions

  1. Prepare the Marinade: Combine olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, smoked paprika, salt, and freshly ground black pepper in a bowl. Whisk together until smooth and well blended.
  2. Marinate the Mushrooms: Add the cleaned button mushrooms to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, but preferably for 2 to 3 hours to allow the flavors to deeply infuse the mushrooms.
  3. Soak the Skewers: If you are using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent them from burning on the grill.
  4. Preheat the Grill: Preheat your grill to medium-high heat to get a good sear and char on the mushrooms once they are placed on the skewers.
  5. Assemble the Skewers: Thread the marinated mushrooms evenly onto the skewers, leaving a little space between each mushroom to ensure even cooking on all sides.
  6. Grill the Mushrooms: Place the assembled skewers on the preheated grill and cook for 10 to 12 minutes, turning occasionally to achieve a nice char and to cook through evenly.
  7. Serve and Enjoy: Remove the skewers from the grill, garnish with fresh parsley if desired, and serve warm as an appetizer or side dish.

Notes

  • For a vegan version, use maple syrup instead of honey.
  • Button mushrooms work best, but cremini or baby bella mushrooms can be used for a richer flavor.
  • If you don’t have a grill, you can cook the skewers under a broiler or on a grill pan on the stovetop.
  • Soaking wooden skewers is essential to prevent them from burning during grilling.
  • Serve with a side of fresh herbs or a squeeze of lemon for extra brightness.
