For the Crust
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed

For the Filling
- 1 cup fresh or frozen mango, pureed
- 2 large eggs
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon lime juice
- 1/2 teaspoon lime zest
For the Glaze
- 1/2 cup powdered sugar
- 1–2 tablespoons lime juice (adjust for desired consistency)
Instructions
- Prepare the crust: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper. In a bowl, combine the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the pan and bake for 15–18 minutes until lightly golden.
- Make the filling: While the crust bakes, whisk together the mango puree, eggs, granulated sugar, flour, lime juice, and lime zest until the mixture is smooth. Pour this filling over the hot crust immediately upon removal from the oven.
- Bake the bars: Return the pan to the oven and bake for an additional 20–25 minutes, or until the filling sets and no longer jiggles in the center. Remove from the oven and allow to cool completely in the pan.
- Prepare the glaze: Whisk powdered sugar and lime juice together until smooth, adjusting the lime juice to achieve the desired glaze consistency. Drizzle the glaze evenly over the cooled bars.
- Chill and serve: Refrigerate the glazed bars for at least 1 hour to set before slicing into 16 squares. Serve chilled for the best texture and flavor.

- Use very ripe mangoes for the best flavor and smoothest puree.
- These bars can be prepared a day ahead and stored in the refrigerator.
- For extra lime zing, add additional lime zest to the glaze.
