Chicken and Rice Mixture:
- 3 cups cooked chicken breast (shredded)
- 2 cups cooked white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup chicken broth
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
Topping:
- 1 cup crushed butter crackers (like Ritz)
- 2 tablespoons unsalted butter (melted)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Mix Chicken and Rice: In a large bowl, combine shredded chicken, cooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, garlic powder, onion powder, black pepper, and cheddar cheese. Mix until well blended.
- Prepare Topping: In a small bowl, combine crushed crackers with melted butter and sprinkle evenly over the top of the chicken and rice mixture.
- Bake: Bake for 25–30 minutes, or until hot and bubbly with a golden topping.
Notes
- This casserole is great for using up leftover chicken or turkey.
- You can also add 1 cup of frozen mixed vegetables for a complete one-dish meal.
