Description

Mamaw’s Chicken and Rice Casserole is a comforting and creamy dish that brings back memories of home-cooked goodness. This easy-to-make casserole is perfect for using up leftover chicken and is sure to become a family favorite.

Chicken and Rice Mixture:

  • 3 cups cooked chicken breast (shredded)
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Topping:

  • 1 cup crushed butter crackers (like Ritz)
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Mix Chicken and Rice: In a large bowl, combine shredded chicken, cooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, garlic powder, onion powder, black pepper, and cheddar cheese. Mix until well blended.
  3. Prepare Topping: In a small bowl, combine crushed crackers with melted butter and sprinkle evenly over the top of the chicken and rice mixture.
  4. Bake: Bake for 25–30 minutes, or until hot and bubbly with a golden topping.
