Description

This Magic Lemon Cobbler is a delightful dessert that creates its own lemon sauce as it bakes, resulting in a ‘magic’ layered effect. With a golden top and a gooey lemon layer underneath, this cobbler is best served warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Ingredients

Scale

Main Batter:

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup granulated sugar
  • 1 cup milk
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Lemon Sauce:

  • 1/4 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 cup hot water

Instructions

  1. Preheat and Melt Butter: Preheat the oven to 350°F (175°C). Place the unsalted butter in a 9×9-inch baking dish and let it melt in the preheating oven.
  2. Mix Batter: In a medium bowl, combine flour, baking powder, salt, 3/4 cup sugar, milk, vanilla extract, and lemon zest. Mix until smooth.
  3. Pour Batter: Once the butter is melted, remove the dish and pour the batter evenly over the butter without stirring.
  4. Prepare Lemon Sauce: In a separate bowl, mix 1/4 cup sugar, lemon juice, and hot water. Carefully pour this mixture over the batter in the dish without stirring.
  5. Bake: Bake for 40–45 minutes until the top is golden and the cobbler is set with a lemon layer underneath.
  6. Serve: Let the cobbler cool slightly before serving.
