- 1 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter

For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 4 slices thick-cut bacon, chopped
- 1 small onion, finely chopped
- 1 small green bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 2 tablespoons chopped fresh parsley (optional for garnish)
- Hot sauce (optional, to taste)
Instructions
- Cook the Grits: In a medium saucepan, bring water to a boil. Stir in grits and simmer for 20–25 minutes until creamy. Stir in butter, cheddar, salt, and pepper.
- Cook the Shrimp: Cook bacon until crispy. Remove and set aside, leaving drippings. Cook onion, bell pepper until softened. Add garlic, shrimp, Cajun seasoning, and cooked bacon. Spoon grits into bowls, top with shrimp mixture.

- For extra flavor, cook the grits in chicken broth instead of water.
