Instructions
- In a large pot, heat butter and olive oil over medium heat. Add onion, celery, and red bell pepper, and sauté for 5–6 minutes until softened.
- Stir in garlic and cook for 30 seconds. Sprinkle in flour and stir continuously for 1–2 minutes to create a light roux.
- Slowly whisk in the broth, ensuring there are no lumps. Add the corn, paprika, cayenne (if using), salt, and black pepper. Bring to a gentle simmer and cook for 10–12 minutes, stirring occasionally.
- Add the shrimp and cook for 3–4 minutes, or until they turn pink and are cooked through. Stir in the heavy cream and simmer for an additional 2–3 minutes until heated through.
- Taste and adjust seasoning as needed. Ladle into bowls and garnish with chopped parsley or green onions. Serve hot.

- For a thicker bisque, blend half the soup with an immersion blender before adding the shrimp.
