Ingredients
Scale
Chicken and Coating
- 4 boneless skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese (divided)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Topping
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
Instructions
- Preheat and prepare coatings: Preheat the oven to 375°F (190°C). In one shallow dish, combine the bread crumbs, half of the grated Parmesan cheese, Italian seasoning, salt, and black pepper. In a second dish, beat together the eggs and milk. Place the flour in a third dish.
- Dredge the chicken: Coat each chicken breast first in the flour, shaking off any excess. Then dip into the egg and milk mixture, ensuring it is fully coated. Finally, press the chicken into the breadcrumb mixture to cover completely with the Parmesan and breadcrumb coating.
- Sear the chicken: Heat the olive oil in a skillet over medium heat. Add the coated chicken breasts and cook for 3 to 4 minutes per side, until golden brown. This step locks in juices and develops a crispy crust.
- Assemble and bake: Transfer the seared chicken breasts to a baking dish. In a bowl, combine the remaining Parmesan cheese, shredded mozzarella, and minced garlic. Evenly spread this cheese and garlic mixture atop each chicken breast. Bake in the preheated oven for 20 to 25 minutes until the chicken is cooked through and the cheese is melted and bubbly.
Notes
- To ensure chicken is fully cooked, the internal temperature should reach 165°F (74°C).
- For a lower sodium version, reduce or omit added salt and use low-sodium bread crumbs.
- Use fresh grated Parmesan for the best flavor and texture.
- Serving with a side of steamed vegetables or a fresh salad complements this rich dish well.
- Make sure to not overcrowd the skillet when searing to maintain a crispy crust.
