Ingredients
Scale
Chicken
- 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
- 1 packet (1 oz) ranch seasoning mix
- Salt and black pepper to taste
Potatoes
- 2 pounds russet potatoes, peeled and diced
- 1/4 cup olive oil
- Salt and black pepper to taste
- 1/2 packet ranch seasoning mix
Toppings
- 1 1/2 cups shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat Oven and Prepare Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the diced potatoes with olive oil, half the ranch seasoning mix, salt, and black pepper. Spread the potatoes evenly in a greased 9×13-inch baking dish.
- Bake Potatoes: Bake the potatoes for 25 to 30 minutes, stirring halfway through, until they are tender and lightly golden brown.
- Season Chicken: While the potatoes bake, season the bite-sized chicken pieces with the remaining ranch seasoning mix, salt, and black pepper.
- Add Chicken and Continue Baking: Remove the potatoes from the oven and evenly layer the seasoned chicken on top. Return the dish to the oven and bake for an additional 20 to 25 minutes, or until the chicken is thoroughly cooked.
- Add Toppings: Remove the casserole from the oven. Sprinkle shredded cheddar cheese and crumbled bacon evenly over the top. Return to the oven and bake for another 5 to 7 minutes until the cheese has melted and is bubbly.
- Finish and Serve: Let the casserole cool slightly before topping with dollops of sour cream and a sprinkling of chopped green onions. Serve warm and enjoy!
Notes
- For a quicker version, use precooked rotisserie chicken instead of raw chicken breasts.
- Add steamed broccoli or other vegetables to increase the nutritional value and add color.
- Replace sour cream with Greek yogurt for a lighter, tangier topping.
- This recipe can be made gluten-free by ensuring the ranch seasoning mix used is gluten-free.
