Ingredients
Scale
Base
- 8 corn tortillas, cut into triangles
Meat and Beans
- 1 pound breakfast sausage
- 1 cup black beans, drained and rinsed
Vegetables and Cheese
- 1 cup diced tomatoes
- 1/2 cup diced onion
- 1/2 cup sliced jalapeños
- 1 cup shredded cheddar cheese
Egg Mixture
- 6 large eggs
- 1 cup milk
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole evenly.
- Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until browned thoroughly and cooked through, breaking it up as it cooks.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, chili powder, cumin, salt, and pepper until well combined and smooth.
- Layer Tortillas: Grease a baking dish lightly, then spread the tortilla triangles evenly as the casserole base.
- Add Toppings: Layer the cooked sausage, black beans, diced tomatoes, onion, sliced jalapeños, and half of the shredded cheddar cheese over the tortilla layer.
- Pour Egg Mixture: Carefully pour the egg and spice mixture evenly over the layered ingredients in the baking dish to soak through the tortillas.
- Top with Cheese: Sprinkle the remaining cheddar cheese evenly over the top of the casserole for a bubbly, cheesy crust.
- Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the eggs are fully set and the cheese is melted and golden.
- Cool and Serve: Remove from oven and let the casserole cool for a few minutes to set before slicing and serving warm.
Notes
- You can substitute the breakfast sausage with vegetarian sausage for a vegetarian option.
- Adjust the amount of jalapeños for desired spice level or omit for a milder dish.
- Use low-fat milk or cheese for a lighter version of this casserole.
- Leftovers can be refrigerated and reheated within 2-3 days.
- Serve with salsa, sour cream, or avocado slices for added flavor.
